And that sums it all, how I ended up trying egg in basket inspired by a CTian ( cucumber town chef). I have never cooked something before because it looked appealing. I never bothered altering the regular stuff I cook to make it look aesthetic. But I now realize how good it feels to play around with the simple ingredients one has in the kitchen and I loved the smile on my mom's face when I got the plates on the table. Sometimes you really don't need to cook masterpieces to see that excitement in the eyes of your loved ones. This was one happy Sunday breakfast and I loved the clicks :)
Ingredients for Egg in Basket
Egg-1
Bread slice- 1
Butter- 1 tsp
Oil- 1 tbsp
Pepper- a pinch
Salt- to taste
Rosemary/Dill
Directions
Make a hole in the centre of the bread slice with a cutter big enough to make a sunny side up egg. Toast this bread and the cut out circular piece of bread in a pan after smearing the slice and small piece with some butter. When the one side has toasted flip to the other side. Pour some oil in the hole in the centre of the bread and break the egg carefully ( so you don't mess the yolk). Sprinkle salt and pepper and cook the egg on medium flame. Decorate with Rosemary or Dill. I microwaved the bread for 10 seconds when the egg was half done because I did not want the bread to harden. This is optional, however I like this idea.
We had these along with baked beans. I think I should experiment a lot more with easy to make breakfast dishes. I am having a lot of guests over the next few weeks I think its times to experiment :) Till then ciao!!
Watch out for some exciting recipes from Kerala. I get to hear people say they expect a lot more recipes from Kerala because the blog's name gives them that impression. I have been refraining from Kerala recipes because I thought they were all over the internet but my stats indicate that most visitors check out the old Kerala recipes over the new stuff I post so I guess I should share some of my home recipes :)
