Whole wheat bread with sun dried tomatoes

My hubby enjoys bread making much more than me. He is  always game for some kneading. Ever since I was inflicted with carpal tunnel syndrome I gave up kneading breads and it feels like eternity since I lay my hands over a dough. But to raise my spirits my hubby got me involved in his bread making adventures and this was one adventure I would never want to miss. I didn't care what I ate those days because the pain was excruciating but I did love the quiet time we had, we don't have it anymore :( 



Ingredients for Whole wheat bread with sun dried tomatoes

Whole wheat flour- 400 g
Active dry yeast- 2 tsp
Luke warm water- 265 ml
Cream ( from top of milk)- 100 g
Garlic cloves (minced)- 4-5
Sun dried tomatoes- 3-6
Chilli flakes-  1 tsp
Salt- 1 1/2 tsp
Dried herbs- 2 tsp

Direction

Add all the ingredient sin a stand in mixer and knead well till it forms a sticky dough. Knead for 3 minutes and transfer the dough into and oiled bowl. Coat the dough with oil, cover with cling film and leave it in a warm place for an hour till the dough doubles.Preheat the oven at 250 degrees.


 Line a baking tray with parchment paper and  shape the dough into a loaf ( use damp hands) and leave it on the parchment paper for 20 minutes till the oven reaches the temperature. Bake the loaf for 200 degrees after bringing the temperature down from 250 to 200 degrees.Transfer the bread to a cooling rack once its baked.

Note: I guess I could have baked a bit more because I did not get the browned upper crust but it tasted great. Maybe next time I will pop the tray to the upper rack so that I get a brown crust.
