White Chocolate Mousse


That was the longest time I stayed away from blogging. I am moving to the final stage of my research and I find myself worked up and anxious about the end of this phase. This post has been in my drafts for a month and I just could not compose myself to post it. I would be lying if I said all I do is work all the time. I am so preoccupied and nervous at times that I can't write like I used to some time back, all the more reason I thought I should not post anything if I could not enjoy it like before. But every time I saw the folder of food pics on my desktop, it kept psyching me for not revisiting this space and I decided I am gonna post this today no matter how indecisive and unorganised  it reads.


Remember the Master chef contest at my hubby's office ( yeah the one he won). We got some white chocolate for the contest 6 months ago and I had some of it left in my refrigerator using up quite some space, I intended to use for some other stuff. So I decided to make something with it plus we had guests coming home for the weekend. So here's how I work, I always run a trial before the real cook out. So I made these twice in the same week ( which was like 24 shot glasses). And since they were too many shot glasses with mousse by the end of my experiments I ended up giving it to people around my neighbourhood ( and they still haven't returned me my shot glasses). This is the easiest dessert I have ever made and I was happy I didn't have to purchase anything extravagant to make this little beauties. I don't know if I will be making desserts with white chocolate for some time coz my hubby thinks we have had too much of it to last us a year. But I am thinking of making some dark bitter chocolate mousse the next time, I love the bitter flavour of dark chocolate.

I so miss the mango and cherry season and I have no clue if I would make it home till August. I really want to leave my institute forever and stop shuttling between cities which means I need to submit my thesis. So please bear with whatever I post from my folder till then. And do write to me, I could use some wishes and motivating comments :)



Ingredients for White chocolate mousse ( Recipe from Nigella's Kitchen)

White Chocolate- 250 g
Double cream- 250 ml
Egg white- 1
Vanilla essence- 1 tsp



Directions

Heat the white chocolate over a double boiler ( or in the microwave). In a bowl whisk the cream and the egg whites till soft peak. Please see to it that you don't overdo the whipping else the cream gets grainy.Add the essence to the cream and fold in the cooled chocolate mixture. Spoon in the mousse into shot glasses and decorate them with choco chips or any other decorations you like.
