Strawberry and Yogurt cups for the Summer

I am trying hard to deny that it isn't  awfully hot in Bangalore. I moved to this city hoping to enjoy its wonderful weather all through the year. Which I believe happened because of my good old memories of having visited Bangalore in the winters. My aunts who have been living here for years tell me that the summers were never this bad then. This year has been horrible even at the start of summer. I curse myself for not opting for a fan in the kitchen because I look tired and horrible after every meal I cook and rolling chapathis is something I dread these days. And to top that Easter cooking with a big spread of non veg had me sweating profusely like a pig. I guess I shed a  few pounds sweating. This is something I whipped up recently to beat the heat. Its a health dessert with strawberry and yogurt. I have adapted the recipe from the book- Party- Simple and Delicious party food. The original recipe had apricots but I used strawberries.
 
 This dessert is an alternative to store bought ice cream and is very light and simple. So beat the heat with some yogurt.

Ingredients for Strawberry and Yogurt cups

Plain Yogurt- 2 1/2 cups
Strawberries chopped- 1 cup
Strawberry extract or essence ( I used a preserve)- 4 tbsp
Whole strawberries sliced into halves- 3
Paper cupcake cases- 6

Directions



Line a 6 cup muffin pan with cupcakes cases. Spoon the yogurt into a mixing bowl. Add the strawberry preserve, and chopped strawberries and stir the yogurt. Spoon the mixture into the paper cases and insert the halved strawberry into the center of each cupcake case spooned with the mixture. 

Freeze for 1 1/2 hours or until just frozen. Serve at once.



There's a power failure again in our apartment and its warming up. I am gonna grab a strawberry yogurt cup and gonna read a book. I'll be back with some cool stuff for the summer soon. Till then stay cool and calm :)

    With all the sweating yogurt and strawberry is the right way to go..

  2. Meena I am planning to try the same with mangoes, I already have a recipe on mango yogurt on this blog a little different style from the yogurt cups, you can go through it if you are interested in fruit yogurt.
