The only cutlets mom frequently made at home was Tuna. Though she knew how to make every other kind of cutlets, tuna somehow happened to be her favourite. But Annu aunty- mom's second oldest sister ( they are 8 sisters)was an expert on beef cutlets. She has inherited her mother-in-law's recipe and I can't describe how tasty her cutlets are. I hate things that require frying and its always been like that ever since I started cooking. Except for fish you wont find anything fried in my kitchen. So cutlets are rare treats for my hubby and me. This time when he got beef home for Easter I decided to keep half the quantity away for a curry but then my date to return to IIT was nearing and I saw no point in stocking half kg beef in curry form for one individual left at home. And my cousin who had been living with us for a while was leaving for home for good , I thought he deserved a treat. And that's how I ventured into making these cutlets. I must say they did turn out well though they weren't perfect like Annu aunty's. I hope to grab her recipe this time when I go home but till then folks, here's my recipe for beef cutlets.
Ingredients for Beef cutlets
Beef- 500 gm
Potatoes- 3 large
Onions- 2
Green chillies- 5-6
Curry leaves- lots of them
Ginger garlic paste- 2 tsp
Turmeric powder- 1 tsp
Chilli powder- 1 tbsp
Garam masala powder- 2 tsp
Pepper powder- 2 tsp
Salt- to taste
Egg- 2
Bread crumbs- 100gm
Oil- for frying
Directions
Pressure cook the beef till well cooked. Once cooled mince it in a grinder. Boil the potatoes and mash them. Set them aside and prepare the spices for the meat. In a pan add 2tbsp oil. Saute the chopped onions till soft. Add the green chillies, curry leaves and saute for 2 minutes. Now add the ginger garlic paste and saute well. Add the spice powders and let them blend with the onions. Add the minced meat followed by salt. Once the meat and spices are well blend take the meat off the flame and add it to the bowl with mashed potatoes. Using your hands mix the mashed potatoes and meat. Check if the salt is right or add more. Shape the meat and potato mix into balls and then flatten them into patties. Whisk the eggs in a bowl and set the bread crumbs in a plate.
Dip the patty first in the egg wash and then roll it onto the bread crumbs. Heat oil in a pan and when it's smoking hot fry the cutlets till brown on slow fire. Serve with ketchup, chutney and piping hot tea.
I don't deep fry stuff so you can see parts of my cutlets aren't fried well this was intentional on my part though you can deep fry your cutlets for that perfect brown colour. I did enjoy posing my cutlets for my camera this time and also eating them in the process for those leftover pics :) My camera is back to action after a long inertia ( my charger was dead).
