Bow ties in Pesto with Sausages and Mushrooms

If  I am anxious or down with blues of assorted kinds I resort to cooking. I still have no clue if I am a good cook or a vile one. I just know I learn a lot every time I cook and it soothes my nerves. I have never felt tensed to cook be it for one or ten people I cook with the same passion. I have recently taken fancy for starting a herb garden. I have my own stock of lettuce, basil, parsley and celery as of now. I get to make my own pesto so I made this bow tie pasta with some jalapeno cheese sausages and mushroom using my garden fresh basil-pesto.



My biggest bid of the day was the jalapeno cheese sausages from More supermarket. I was surprised to find a new flavour in their Deli section and that to a fresh pack opened just on my request. What I love about sausages at More supermarket is their prices and the flavour. Unlike sausages I buy from elsewhere the ones at More in Mahadevapura , Bangalore is always economical which means I get to lavish a bit for my experiments. The flavour left by the grease once you fry these sausages can be used for sauteing the mushrooms and onions. My BIL ( brother in law) aka as Manno bhai stayed with us for a week and so like the strawberry flan this too was a dish in his honour. He is not a pasta guy but he is a great foodie so went up for this adventure.

Ingredients for Bow ties in Pesto with Sausages and Mushrooms

Bow ties ( or any other pasta)- 500 gm
Jalapeno cheese sausages- 150 gm
Mushrooms- 200gm
Onion- 1
Bell pepper green - 1
Pesto sauce- 4 tbsp
Basil- 1 tbsp
Chilli flakes- 2 tsp
Fresh cream- 4 tbsp
 Salt

Directions

Boil the pasta till al-dente and drain in  a colander. Chop the sausages, mushrooms, onion and bell pepper.



Fry the sausages till done and set aside. Now saute the onion in the sausage fat. When the onions are half done add the mushroom and bell pepper. In five minutes add the pesto sauce and saute well.I had some pine seeds left half ground for a crunchy  bite.Now add the fried sausages followed by the pasta. If you like it hot and spicy now is the time to add the chilli flakes.



I would have rather omitted them if not for my hubby and Bhai's liking for a spicy twist.Cook the pasta with the meat and veggies for 15-20 minutes. Please see to it that you don't overcook the pasta. Add fresh cream and salt and let the pasta cook for few seconds.



Before taking the pasta off the flame add some dried basil and your pasta is done.
