Recently as I looked around in the dining hall at my hostel I realised the truth in this quote. People eat, in fact serve themselves food and have it so sophisticatedly that I felt like uncivilized and then I began connecting my style of eating to my style of talking and everything I do in general. Quick, impulsive, go-with-the-flow, blunt, impatient are few words that came to me. And then I realised how much my cooking reflected my personality. My hubby often says he is afraid to be near me in a kitchen especially when we have guests. I act as if I am under trance and I don't give clear instructions to people around, its as if I wished I could broadcast my thoughts to cut down the talk. But deep within I enjoy the adrenalin rush in such circumstances and the joy of new ideas brimming in the middle of making something. Unlike my mom who has every ingredient measured before she starts her fire, I have a marathon picking and throwing stuff into my pot.And I now realise that's how I talk and eat, I don't compose, I don't have a meticulous plan and that how I am.
I love bruschettas and want planning to make some last month when we had some guests. But I could not grab baguettes because of rain and fatigue ( in the same order) and so I thought why not go with bread and then I remembered reading this recipe at the blog plateful and thought it could make an easy starter.The topping is my choice and something I often use for sandwiches.
Ingredients for Mini Bread Pizza with Tuna
Tuna - 1 can
Onion- 2 finely chopped
Mushroom- 200 gm sliced
Capsicum- 2 diced
Pepper- 1 tsp
Oregano- 1 tsp
Olive oil- 2 tbsp
Bread- 25 slices
Butter- 25 gm
Basil- 1 tsp
Cheddar cheese- 50 gm
Salt- to taste
Directions
Cut the bread into circles using a cutter.
In a pan heat the oil and saute the onions and capsicum when they are half done add the mushrooms and tuna and add the pepper. Once the mushroom is cooked take the stuffing off the fire. In a bowl heat the butter in microwave oven for 10 seconds. Add a dash of basil and oregano to the butter and whisk well. Arrange the bread in a baking tray and apply the butter with herbs onto the bread slices. Add the toppings onto the bread and finish them with grated cheese and oregano. Bake these mini pizzas in oven for 5-8 minutes at 180 degrees.
We had a young visitor aged 3 and he loved these mini pizzas so we have it certified from kids too :) I loved the butter and herb flavour against tuna and mushrooms. I hope you love these mini pizzas.
