My cousin from Austria who visited us recently inspired me to undergo a diet spree and I have been following it rigidly since some time. When I am at my institute I manage with the food at our canteen and some fruits. Whenever I am home, I am force feeding myself with soups and salads - something that was never my favorite all these years. My hubby too has become motivated to follow a diet regime of his own. This is something I whipped up recently when I was home with the leftovers I found in the fridge. I was carrying a cucumber, pomegranate and some tomatoes from my hostel. To my expectation the fridge was empty and the men in my family gave me a sneer when I asked what I was supposed to have for lunch. So with some leftover pesto sauce and a handful of other ingredients I decided to make this cold pasta salad. Luckily I did have some pasta tucked in the corner of a cupboard and I was very hungry to have bothered what ingredients I have. I am not a pasta person but I really did love this pasta salad and my hubby and I just polished off the leftovers of these today. I was watching Master chef Australia and I loved something the contestants said." Do not fear to experiment". Recently I have had some illuminating thoughts about this blog as to how I can incorporate more reviews of good food on street, history of foods, proverbs, food photography posts alone and also write about movies and books that inspire me to cook. I have been getting a lot of reviews on my Iftar post on street food and I am looking forward to few trips to capture the streets. Till those posts come here you need to bear with some diet food. Ingredients for Cold pasta with pesto sauce
Pasta- 1 cup
Cucumber- 1 diced
Tomatoes- 2 diced
Pomergranate- 1
Boiled potato- 1 diced
Chilli flakes- a pinch
Pesto sauce- 1 tbsp
Salt- to taste
Olive oil- 2 tbsp
Directions
Boil the pasta and drain in cold water so that it does not end sticky.
Chop the cucumber and tomatoes. Boil a potato and dice them once you peel the skin. In a bowl add the pesto sauce, chilli flakes, salt and olive oil and mix them well.
Toss the veggies and pasta into this bowl and give your bowl a couple of tosses. And your pasta salad is ready. I love my salads chilled so I did refrigerate my salad for half an hour. If you aren't dieting add two tbsp of mayonnaise of fresh cream, it would taste even yummier.Chilli flakes is optional because I crave for spicy food.
