Cabbage is popularly called muttakos in Kerala and Tamil Nadu. I could not find the etymology of the word but the history cabbage seems to be from Europe and I guess we definitely acquired this vegetable from our British colonizers. Perhaps the faint resemblance of boiled cabbage with eggs is what motivated the term muttakos ( mutta means egg in both tamil and malayalam). I believe in this firmly because of this dish my mom often made home. Scrambled eggs with cabbage was one easy trick up her sleeve to make us eat this leafy vegetable. We often mistook cabbage for onions and the smell of eggs and cabbage together often made us feel it was a lavish meal of scrambled eggs. So this became a favourite companion of rotis and bread at home. I never tried this dish since I got married but then one da I decided to test my hypothesis and made this for breakfast. I sat back to watch my hubby who loved scrambled eggs. He ate with no remarks and I assumed he must have got the ingredients but did not seem interested in commenting. It's when he got a thick piece of cabbage that was not chopped finely that he looked up from his plate and asked me " How did this cabbage fall into the pan of eggs?" and I knew mom's trick had worked. This dish is a life saver when you are low on eggs and have unexpected guests home for nothing can add volume to your scrambled eggs like cabbage. Hope you guys enjoy this dish like me.
Ingredients for Cabbage with Scrambled eggs
Cabbage- 250 gm grated or finel chopped
Eggs- 3
Onion- 1 medium sized one finely chopped
Green chillies- 3 finely chopped
Salt- to taste
Turmeric powder- a pinch
Oil- 3 tbsp
Directions
Heat oil in a pan and saute the onions followed by green chillies. You can add curry leaves if you like the flavour, I skip them. Add the turmeric powder and salt followed by the cabbage. Cook for 15 minutes. Cook cabbage to your preference some like it well cooked while some others like it stir fried.
I cook them well. Add the whisked eggs into the cooked cabbage and scramble them.
Once you have scrambled eggs dry and crisp take it off the fire. Sometimes I add 3 tbsp milk for a watery consistency when I am in mood for gravy and don't fry the eggs too much. Adding pepper powder or chilly flakes is a good option too. Till we meet again feast!!!!! indulge !!!!! ciao!!!!!
