Yoghurt and Choco chip muffins



I have often wondered how cupcakes differ from muffins. They both come in the same paper cases are baked goodies and often sweet in same composition. Or maybe the ones I taste in India are more or less the same. Nah!! I have tasted them elsewhere ( Middle east, London, Italy, Cyprus) and they still amuse me. For beginners or experts ( can't undermine your cooking skills because you doubt) or the average learners like me I think the basic difference between cupcakes and muffins is that cupcake is still a cake smaller portion neatly cased while muffins is a short bread or belongs to the bread family rather.Muffins are savoury and sweet while cupcakes are sweet. Not all muffins come with frosting ( Bacon muffins or cheese mufifns for instance). While not all cupcakes are frosted they can be. So now that we have got into the differences, I am going to share one of the easiest muffin I baked recently. I feel guility when i leave home especially my hubby for my Phd work so I console him with my share of goodies. This one came up last time. I actually intended bringing some to work but then my hubby said I never bake exclusively for him and so I left them all for him.

I love yoghurt but yoghurt in muffins was because this was a last minute idea and I had no time to buy anything fanciful and that's the fun with muffins you can whip up a batch with anything ( I even tried zucchini once :)  ) While doing this in hurry I thought something wrong would happen and it would not taste great but I turned lucky and my batch came out fine. This recipe is from the joy of baking the only variation is my using choco chips instead of blue berries.

Ingredients for Yoghurt and Choco chip muffins

All purpose flour- 260 gm
Sugar- 100gm ( granulated)
1 cup yoghurt
2 eggs
Milk- 100 ml
Baking powder- 1 tsp
Salt- 1/4 tsp
Baking soda- 1/2 tsp
Sunflower oil- 60ml
Vanilla - 1/2 tsp
Choco chips- 50 gm


Directions

Sieve the flour, baking powder, baking soda in a bowl. In another bowl whisk the egg with salt followed by the sugar and oil. Fold in the dry mix of  sieved powder to the egg batter. Add vanilla essence and milk to the is batter and mix well.  Add yoghurt and mix well and sprinkle the choco chips. Pour the batter into  tray lined with muffin cases. Pre heat the oven to 190 degrees and bake the muffins for 20-25 minutes. Insert a tooth pick after twenty minutes to check if the muffins are done. Cool them on the rack before serving.
