This post should have been up months ago had it not been lost in an old folder on my comp in Bangalore. My hubby was exuberant and enthusiastic after his bread making class last year and he made me a pizza using the recipe he learned at his class. I loved watching him knead which left me with loads of time to click pics and prepare the toppings. We had some leftover mutton, few sausages,some corn and cherry tomatoes and a half of red and yellow bell pepper with us that day so I went ahead and made a generous topping with all the ingredients at hand. I use home made pizza sauce and always have some in store in my freezer. I thought I had provided the recipe for pizza sauce last time http://ooonuready.blogspot.in/2012/09/zucchini-mushroom-and-chicken-sausage.html but it so happens that I haven't so this time I'll give you my recipe for pizza sauce.
As mentioned in my last post I am a die hard fan of Italian cuisine and I can live on pizza all the time.I know people consider it junk food but my Italian friends always told me its the Americanised Pizza that was junk food and the real Italian pizza is just like having brad with a little cheese and veggies. And it was true because the kind of toppings I saw in Italy would never top the charts of any Pizzeria anywhere else. I was fascinated to know people ate pizzas with melons, pumpkin, brinjal, basil , potatoes and any other vegetable imaginable. It needn't be a fancy pepperoni, sausage, chicken or paneer pizza like the ones we see here. My hubby laughed to death when he heard I spent 3 euros on a brinjal and basil pizza and said he would rather die than eat it. Seldom did I have cheese crust pizzas or overloaded cheesy pizzas with extra toppings. The Italian pizzerias I visited had very simply thin crusted pizzas and something about the way they were made told you it was a wholesome selection of ingredients and cannot be junk. Back in India I tried convincing my hubby to change our outlook towards pizza and to incorporate more vegetables and reduce the cheese but it has not worked so far. As you can see this recipe has mutton and sausages and mushrooms and peppers ingredients that could go into four kinds of pizzas had we been in an Italian pizzeria.
However, its been a pleasure watching WHO toil in the kitchen with his pizza making mission and I present his recipe under the guest post.
Ingredients for Mutton Pizza with corn, cherry tomatoes and sausages
For Pizza Crust
Flour- 100 gm
Bread improver- 2 gm
Yeast- 2 gm
Salt- 2 gm
Olive oil- 5 gm
Water- 60 gm
Direction
Prepare the dough with above ingredients. Shape and prove in a frame. Nicely oil the top while proofing. Prove and bake at 220 degrees.
For Pizza Sauce
Olive oil- 2 tbsp
Garlic- 3-5 cloves
Carrot- 1 grated
Tomatoes- 4 large one ( peeled, chopped,seeded)
Tomato puree- 2 tbsp
Salt- to taste
Oregano dried- 1 tsp
Basil dried- 1 tsp
Direction
Heat oil in a pan. Add the minced garlic cloves and saute for 2 minutes. Now add the grated carrots, followed by the chopped tomatoes. Add salt and let the ingredients cook for 5 minutes. Add the tomato puree followed by basil and oregano and let the sauce simmer for ten minutes and your sauce is ready.
For pizza toppings
Corn boiled - 1/4 cup
Red and Yellow bell pepper diced- 1/2 of each
Onion diced- 1
Mutton finely chopped- 50 gm
Sausages chopped- 3
Mushrooms cooked- 50 gm
Cherry tomatoes sliced- 50 gm
Garlic powder- 1 tsp
Paprika powder- 1 tsp
Mozarella cheese- 100gm
Direction
Boil the corn and keep it aside. In a bowl mix the chopped sausages with the paprika and garlic powder and grill it for 5 minutes. Grill the cherry tomatoes with a pinch of salt in a different bowl. Cook the mushrooms with salt and paprika.
Now make the base of the pizza and smear the sauce on top of it. Add the ingredients one by one and sprinkle the cheese followed by some oregano. Bake at 220 degrees for twenty minutes and your pizza is ready.
