My Brother -in- law visited us recently which meant a golden opportunity for experiments and cooking and I used it to my maximum. I had been wanting to try something new and easy with strawberries. Since the season for strawberries was coming to an end I remembered this recipe from Vazhayila.com by Sarah Naveen and decided to try this. I am not a strawberry person but I love the fact that it adds a brighter shade to the dishes I try with them. I guess I have started loving the aesthetic appeal of my dishes to taste ;) so if it looks good it's definitely gonna be on my plate for that right click of my camera. I guess the recipe needed a little more sugar according to my taste to get rid of the tanginess but it's definitely a no pain easy to have dessert that can be whipped up in no time. I have never had any other berries so far but I have seen a similar recipe with blueberries at 'take away chef' on TLC so for those of you who have access to other sort of berries do try this recipe with other berries and if you have a sweet tooth add more sugar.
Recipe for Strawberry Flan
Strawberries sliced- 50 gm
Egg- 1
Milk- 40ml
Caster Sugar- 4 tbsp ( the recipe said 1.5)
Vanilla extract- 1 tsp
All purpose flour- 3 tbsp
Baking powder- 1/2 tsp
Icing sugar- for dusting 1 tbsp
Direction
Preheat the oven at 400 degrees and place a tray in the oven. Divide the berries into four ramekins. In a bowl beat the caster sugar and egg till fluffy. Add vanilla essence and milk to the egg mixture and beat well. Now fold in the flour and mix well. Spoon in the mixture equally into the four ramekins. Place them onto the tray in the preheated oven and bake for 15- 20 minutes.
Dust with icing sugar and serve immediately. If you serve it a little later please reheat the flan for a minute or two before serving. You can also have it with a dollop of ice cream if you have a sweet tooth. I had it just baked without the icing sugar dusting so I found the strawberries too tangy. But I did like the cake like texture which gave me the feeling of having a pseudo strawberry sponge cake.
