I was recently ruminating over the possibilty of making a sandwich with mashed potatoes and I conjured up this recipe. I would have gone for brown bread but I got these dinner rolls from the supermarket. They smelt so so good that I could not turn them down. I loved creating this recipe and later when I googled for recipes with mashed potatoes I was amazed I was not the only one who had thought on similar lines. It's amazing how our cravings and innovations are not ours alone and a part of a collective unconscious. Since it's lenten season and we are strictly vegetarian my possibility to build a good sub sandwich with lot of cheese and meats went down the pipeline but it was equally a challenge posting something vegetarian.
Ingredients for Mashed potato sub sandwich
Dinner rolls- 1
Potatoes- 2 medium sized ones
Onions- 2 large
Sweet basil- 1 tsp
Oregano- 1 tsp
Cheese spread- 2 tbsp
Salt
Pepper- freshly grounded 1 tsp
Balsamic vinegar- 2 tsp
Sugar- 2 tsp
Cream- 2 tbsp
Olive oil- 2 tsp
Directions
Boil the potaoes and mash them. In a bowl add cream, basil, oregano and salt.
Mix the ingredient well and add it to the mashed potatoes.
Heat oil in a pan and saute chopped onions. Add sugar half way to caramelise the onions. Add a pinch of sweet basil followed by balsamic vinegar. This gives a tangy flavour to the caramelized onions.
Add freshly ground pepper and take the onions off the fire and let it cool. Smear cheese spread inside the slit dinner rolls. Fill the rolls with mashed potatoes on one side and the caramelized onions on the other side.
Grill the sandwich and cut them into two parts. Serve the sub sandwiches with ketchup and chips.
