Fish Fillet in white sauce






As a kid, I hated fish. My hatred was exacerbated with the fondness my sister and dad had for fish. I often told myself fish would never be a part of my regular menu when I had my own kitchen. But like many resolutions of mine that backfired when I got married, this too did. My hubby's love for fish has made me want to master fishy dishes ;) .

My friend Sudheesh who has recently taken up vegetarianism ( which thankful has fish on diet) asked me if I could experiment a white sauce fish so I tried this on my Birthday last week.

My hubby is the filet expert here and we were practicing filleting on a pink salmon. I liked th whole idea of fish in white sauce and hope to experiment it again with other kinds of fish. Do let me know about your experiences .



Ingredients for Fish fillet in white sauce

Fish fillet- 500gm
Cheese grated- 150 gm
Milk- 1 cup
Butter- 3 tsp
Onion- 1 chopped finely
All purpose flour- 2 tsp
White wine- 3 tsp
Rosemary- 2 tsp
Salt- to taste
Pepper- a dash
Olive oil

Directions

Heat olive oil in a pan and shallow fry the fish fillet.Don't over do the fish, drain it as soon as it's fried shallow. In another pan heat the butter.

Now saute onion and add flour when the onions are yellow. Add milk to this paste and make a sauce. Add rosemary, pepper and cheese to the sauce and let it simmer. Sprinkle salt and add the wine.



The sauce can either be poured over the fillet served on plates or the fillet can be added onto the sauce and left to simmer on fire for 5 minutes. I did the latter though I think I would try serving the sauce on plate next time. I did steam some vegetables and made some garlic bread along with the fish fillet.
