Kadu manga aka Manga curry- Onam Sadya Recipes series number 2




I thought I would post this last night but  dear Sarah was waiting for momma to submit her thesis and has become very demanding. So I went to bed quite earlier than I expected. This is an old post and is being re-posted here because some of my friends told me they were finding it hard to search posts from the archives. Now with just four days left for Thiruvonam, if you are keen to try all the dishes and you are alone at this task, I suggest you make the easy stuff a day ahead. And by easy stuff I mean kadu manga, inji curry, even chopping the veggies. If you plan an easy pachidi like the inji pachidi, vendaka pachidi, you can chop and fry the ingredients tommorow (Friday). Even kalan, mezhukuvaratti and thoran can be prepared a day ahead. So here's another recipe to begin with.

Ingredients for Kadu manga Achar

Raw mangoes- 4 ( chopped into small pieces)
Chilli powder- 3-4 tbsp ( I use Ashirvad's red and hot it' spicy and gives colour)
Fenugreek powder- 1 tsp
Asafoetida- 1 tbsp
Salt - to taste
Mustard powder-  2 tsp
Coconut oil- 4 tbsp ( I don't suggest any other oil, for me this pickle is to be made in coconut oil)

Directions

Marinate the mango pieces with the spice powders and salt and set aside for half a day ( even one day preferably). 

Next day add oil to the marinated mango pieces and transfer it to an air tight container.
