I have often seen bloggers putting up recipes from fellow bloggers in their guest section. I have also read tips on food blogging that states one should be careful on who posts in the guest section and getting the right posts under this section would add to one's blog's stats. I am quite poor at associating with other bloggers. Not that I never tried but I was not persistent in my efforts :) So this section to me is where I post recipes tried by my family and friends and frankly not many friends and family are willing to lend photos and recipes. So it came as a surprise when my little bro sent me these pics on Easter. My mom was with me for Easter awaiting her first grandchild and that left my bro all alone to explore the kitchen. He loves cooking but is not crazy about it like me. I have never been home to watch him grow into this pro chef, so I have not tasted anything he cooked. But I never expected him to make stuff like naan and mutton fry so I asked him the recipe. he mailed them to me in a day and I was happy ( usually I beg people for pics and recipes). I am definitely gonna try these dear bro and thanks for the pics. I hope we get to cook together some day and I look forward to your next visit.
Recipe for naan ( without yeast)
All purpose flour- 2 cups
Warm milk- 1/2 cup
Yogurt- 1/2 cup
Salt- 1/4 tsp
Sugar- 1 tsp
Baking powder- 3/4 tsp
Baking soda- a pinch
Butter- 2 tbsp
Kalonji seeds- 1 tsp ( or herbs of your choice)
Directions
Sieve flour, baking powder, baking soda and salt
two times. Place the sieved flour on a wide plate. Make a well in the center of
the flour and pour sugar, milk, yogurt and slowly combine, to form a soft
dough. Cover with damp cloth and let it rest for 2 hrs.
After two
hours, knead the dough gently for 2 minutes. Dust the working surface with some
flour, pinch a large lemon sized dough and roll into a thick roti, slightly
elongated in shape. Sprinkle a few onion seeds/kalonji.
Wet your fingers with water and run your
fingers along one side of the roti.
Heat a
iron tawa and once its hot, place the naan, wet side down and place a lid and
cook for 40-45 secs on high flame. Remove the lid and you will find that the
naan bubbles up. Now cook the other side of the naan over direct heat of the
burner using tongs, spreading the naan all over the heat such that brown spots
appear. Do this for a few secs only and not too close to the flame.
Drizzle
some butter over the naan and serve hot with any curry of your choice.
Recipe for Mutton Pepper fry
Mutton-1/2 kg
Mustard seeds-1/2 tsp
Curry leaves- 2 sprigs or more
Onion ( sliced)-2 nos( medium)
Shallots( sliced)-10 to 12 nos
Ginger and garlic( chopped)- 1tsp
Coriander powder- 1 tbsp
Turmeric powder-1/2 tsp
Garam masala powder - 1 tsp + 1/4 tsp
Fennel powder-1/2 tsp
Water
Coconut oil( or any other vegetable oil)
Salt to taste
For Marination
Turmeric powder-1/4 tsp
Coriander leaves( chopped)-1/4 cup
Mint leaves- 4 to 5 nos( optional)
Green chilies- 2 nos( or according to taste)
Whole black pepper- 2 tsp( adjust according
to taste)
Ginger ( 1" piece)- 2 nos
Garlic( Indian )- 8 to 10 cloves
Lemon juice-2 tsp
Salt to taste
Method
In a blender,combine together the ingredients
for marination and grind to form a smooth paste.
Rub this onto the mutton pieces and keep
aside for at least 30 minutes.
Heat oil in a pan and add mustard seeds and
let it splutter.Now add curry leaves,onion and shallots.Saute until it turns
golden brown.Add chopped ginger and garlic and saute for few seconds.
Now reduce the flame to low and add the
coriander,turmeric,garam masala and fennel powder along with 2 tbsp of water
and mix well.Saute until oil separates for about 2 to 3 minutes.
Add the marinated mutton pieces and mix
well.Pour in required amount of water ( appr 1 1/2 cups) and salt to
taste.Cover and cook over a medium flame until mutton is done.
Cook until all the water is absorbed .When it
is almost dry add 1/4 tsp garam masala and more curry leaves.
Continue frying ,stirring in between (
drizzle more oil if required) until it turns brown.
Note: You can also use a pressure cooker to
reduce the cooking time.In that case when the mutton is cooked transfer it to a
non stick pan for frying.
