Watermelon mojito Popsicles



Watermelon happens to be one of my favorite fruits and I love it in any form. It so happened that I was  skimming through a book on cocktails and came across this recipe of watermelon mojitos. I thought they would make exciting  popsicles. I also came across this link http://www.buzzfeed.com/rachelysanders/super-cool-popsicles-to-make-this-summer?sub=2203221_1151255 on popsicles for summers and have been dying to make popsicles ever since. I wish I could do this the whole summer, maybe I should with all the guests pouring in to visit us for holidays. For now it's the easiest popsicle recipe ever, spike it with a bit vodka if you are game for it. Else stick to the mocktail recipe below, either ways its fun. I am waiting for the mango prices to settle down maybe mango popsicles would taste great too, what do you think? 

Ingredients for Watermelon Mojito Popsicles

Watermelon ( deseeded)- 500 g
Mint leaves- 1 sprig
Lemon juice- 1 lemon
Vodka- 2 tbsp ( optional)
Honey- 2 tbsp ( or 3 tbsp sugar)

Directions

Blend all the ingredients mentioned above in a blender and pour it into the Popsicle moulds.


 If  you don't want to make a cocktail, make a mocktail by skipping vodka. Freeze the popsicles for 4-6 hours and serve them thereafter.
