Carrot- Orange cup cakes



And I am back. Though this post was scheduled days ahead, while typing these lines I am a mother of a baby girl.  Yep, I am a mother of a little princess named 'Sarah'  since 25th April. I thought I would get back to blogging with a special recipe dedicated to my daughter after a few weeks . So I thought I would take a break for few days but then sleepless nights and a cranky baby can make you long for some sanity and for me each time I am tired and worn out, torn apart and upset, I get back here. This was the last thing I cooked or baked before my delivery- carrot orange cupcakes for Easter. I love the cream cheese frosting, I made it from scratch. I haven't  shared the cream cheese recipe here. Ingredients for Carrot- Orange Cup cakes

For the cake

Butter- 8 tbsp
Brown Sugar- 115 g
Grated rind and juice of orange- 1
Eggs- 2
Carrots grated- 175 g
Walnuts/Almonds chopped- 25 g
All purpose flour- 125 g
Vanilla essence- 1 tbsp
Baking powder- 1 1/2 tsp

For the Frosting

Icing Sugar- 100 g
Orange rind- 1 orange
Cream cheese- 100 g



Directions

Put 12 muffin paper cases in a muffin pan. Put the butter, sugar and orange rind in a bowl and beat together until light and fluffy. Gradually add the eggs, beating well after each addition. Squeeze any excess liquid from carrots and add to the mixture with walnuts, vanilla essence and orange juice. Stir into the mixture utnil well mixed. Sift in the flour and baking powder and mix well. Add the mixture into muffin cases and bake for 30 minutes at 180 degrees till a skewer inserted comes out neatly.



For the frosting whip the icing sugar along with the cream cheese and orange rind. Apply the frosting using a butter knife or pipe it using a piping bag. I prefer applying the frosting when its chilled. Use decorations of your choice, I used Easter eggs because I baked these cupcakes for Easter. My hubby suggested a plain cream cheese frosting with vanilla essence the next time because he found the orange flavor in cream cheese too strong so if you don't like a strong flavored icing omit the orange rind in the frosting.
