I submitted my second draft and a report for a meeting that's happening on this Thursday. Frankly when I got up today morning I did not think I would manage both these tasks so I thought this calls for a celebration.And the next few days is gonna be crazy. My friend has her defense viva on the 3rd of July and my supervisor wants me out of this place by July so I don't know when I am gonna find some time to write again so here's something from my archives. I had some green pepper corns and some bow ties I wanted to try something with both these ingredients. I heard Nigella on her show saying how red and yellow pepper reminds us green peppers are way out of league. Green pepper have such sharp and distinct flavour it can be overwhelming at times. However, the red and yellow bell peppers bring in a sweetness to the dish especially if it's a pasta. And to confirm this hypothesis I added a red and yellow bell pepper to my pasta.
The rest was short and simple. I am a die hard fan of basil so I added a dash of that and my pasta was ready. My hubby found the green pepper corn flavour quite overwhelming. He suggested, I grind them with fresh basil the next time and I think that would be a great idea.
Ingredients for Bow ties with Red and Yellow Bell Peppers, Sausages and Green Pepper Corns
Bow tie pasta- 200 gm
Red bell pepper- 1
Yellow bell pepper- 2
Onion - 1
Green Pepper corn- 1 tbsp ( ground into paste or can be used as whole)
Sausages- 100 gm
Basil (dried)- a dash
Salt- to taste
Garlic- 2 cloved
Olive oil- to use
Directions
Boil the pasta to al dente. While boiling and draining the pasta pour some ice cold water to the drained pasta to prevent it from over cooking and being sticky.
In a wok heat some oil add the crushed garlic cloves followed by the chopped onions. Once the onion soften add the bell peppers and the sausage.
Saute till they are soft before adding the pepper corns and basil. Add salt and let the ingredients cook half way through before adding the bow ties. Cook the pasta till done.
I don't like mine over cooked so I leave the choice to decide how cooked your pasta should be to you. By now your pasta should be ready so dig in !!
