When it comes to leftovers we Keralites are quite pathetic. We drag all the leftovers to our next meal and sometimes our refrigerators are filled with those 15- 25 gm small shot glass kind of containers with a little of this and that. Back at my home we even had a leftover lunch when all mom did was cook rice and all the leftovers would be brought out to finish. Nevertheless we did eat them do the last crumb and never wasted a morsel. My hubby however, does not like eating stuff from the fridge and freezer so chances are that the food ends up in garbage on the third of fourth day. Reinventing with leftovers therefore, is my favourite part in experimenting with food. I had some leftover chicken curry and my hubby rang up from office saying he was coming home and is extremely hungry. My initial response was how about two chapathis with the leftover chicken curry :) but then I decided I would try a sandwich. The curry was mildly spicy and the spices had sunk into the meat in two days so I decided to make it a bit tangier. I have tasted many chicken curry sandwiches recently from Cafe coffe day mostly and some katti roll shops so I thought I would experiment on my own. When it comes to such experiments, I just add stuff I find in my store. They never turn out the same the next time I want to recreate them, but I guess that's what I like about these little experiments. The final produce was simple and heavenly. It had lot of flavours in such a combo that it just exploded in my mouth. There is always scope for leftovers in every kitchen and knowing how to use your ingredients is definitely a giftedness.
Ingredients for Curried Chicken Sandwich
Bread- 4 slices
Chicken- 1 drumstick shredded
Tomato- 1 finely chopped
Pepper crushed- 1 tsp
Honey- 2 tsp
Mustard sauce- 1 tsp
Mayonnaise- 2 tbsp
Fresh basil- a pinch
Directions
Shred the chicken.
Add chopped tomatoes and fresh basil along with the crushed pepper and toss well. Keep aside for 5 minutes.
In another bowl mix the mayonnaise, mustard sauce and whip it up. Add the chicken mix to this and toss well. Add the honey in the end and stuff the bread with this filling.
Grill or toast the sandwich and have a great bite.Honey was an unintentional ingredient. It so happened that I found the sandwich a little spicy to my taste. The honey was added to neutralise this flavour.
