Beef and noodle soup



We recently had friends stay over weekend. I tried a beef casserole recipe which did not go well with the group. I was upset about the beef being wasted so I converted it into this soup. Our guests had left by then and my hubby and I weren't in the mood to cook something grande. My hubby had an exciting day of Team work at office. He had been to a rescue home for dogs and claimed he was tired and deserved something nutritious. But I guess I was looking out for an opportunity to use the beef  so I decided on this soup. I had some frozen veggies and I thought they would get utilised too. Something new that I used was these noodles. It's something I procured from Eco nut in Chennai. This noodles is made from moong dal (green gram) and considered healthy and nutritious. 


It tastes just like maggi or any other instant noodles.I did not foresee that it could be salty so I added salt to the soup and the whole thing became too salty. Otherwise it was a very healthy meal. Sometimes recipes that are experimented unexpectedly are hard to reproduce again, specially because we don't make soups regularly and not every day does a dish gets the unpopular vote to make me want to produce it in another form. So I am not sure when this soup will visit our tables again, but I sure enjoyed the mission of converting the beef casserole into soup.

Ingredients for Beef and noodle soup

Beef- 200 gm thinly sliced
Onion- 1 diced
Carrots- 100 gm diced
Beans- 100 gm diced
Corn- 50 gm
Garlic- 5-6 pods
Moong dal noodles- 100 gm
Worcestershire sauce- 2tbsp
Salt- to taste
Pepper- 1 tsp
Bay leaf- 1

Directions

Pressure cook the beef with 2 cups of water. Since we don't get ready made stock here I do this to get the stock for soup, Once the beef is well cooked separate it from the stock. In a pan heat some oil and add the bay leaf followed by onion, garlic and saute till the onion browns.


Add Worcestershire sauce and pepper followed by the vegetables and beef. Cook the vegetables and beef for fifteen minutes. 


Now pour in the stock. Transfer the ingredients completely to a pressure cooker and cook till a whistle or two. You can avoid pressure cooker if you don't want the soup mashed or well cooked.


 Add the noodles finally and let the soup simmer for five minutes and your soup is done.

I must admit it takes a lot of patience to sit and type a few lines these days. I guess I am starting to get fixated doing nothing for days and my research is getting on my nerves.
