Its been quite some time that I have not posted anything here. I blame Flickr for this because I have not been able to edit photos lately. Though that is a lame excuse with a lot of softwares around. And I also cant blame the internet being slow or my friends and family taking up my time. As lame as I might sound today , nothing will stop me from posting this yummy dish. Its been a while since I had made cold salads and that's when this new joint opened at the institute. I instantly fell for their macaroni salads so decided to experiment it at home. My hubby hates salads inf act he hates veggies and anything raw. So to trick him into eating this I used quite a bit of salami. I would love it veg too. So the vegetarians I suggest you add crispy fried potatoes instead of salami. What I love about this pasta is that it tastes better every time you have it ( I had some leftover for my hubby and he said he liked it the next day).
Ingredients for Macaroni Salad
Macaroni boiled- 200 gm
Capsicum yellow- 1 chopped
Capsicum red- 1 chopped
Lettuce- 1 chopped finely
Pineapple- 200 gm chopped
Salami- 200 gm cubed
Cherry tomatoes- 100gm
Fresh cream- 100 ml
Salt and pepper to taste
Direction
Boil the pasta and drain it. While draining it pour cold water so that the pasta does not stick together . Add butter or oil to make it non sticky. Chop the lettuce finely. Dice the capsicums and pineapple. Slice the cherry tomatoes into halves or leave them as whole if you like them that way.Dice the salami ( vegetarian substitute this with some deep fried potatoes ). In a bowl whip the fresh cream with salt and pepper.

Toss the capsicums, pineapple, salami., cherry tomatoes, macaroni, lettuce and mix well. Serve chilled as a starter. I wanted to add some broccoli for that dark green effect. This dish is a teaser to all your senses. I love the vibrant colours, the smoked smell of capsicums against the macaroni and it is a greater delight to my palate to sink into the tangy pineapple and raw capsicums.But I guess what turns me on is the colourful appeal. The one I frequently taste at the institute has fried potato bits and I love it a lot. Hope my long absence will be forgiven with this little recipe. Till I meet you again Ciao !!
