A dish dedicated to my bro- in- law again. Bhai you really got no clue how much your chotu loves you. Every time he has a vada he talks of you and your fondness for dahi vada. So we decided to make this for easter when you came down. Its amazing how love for us often gets expressed in the form of food be it pork fry or naturals ice cream or dahi vada, every dish has a secret story of love. Ingredients for Dahi vada
Urad dal- 250 gm
Onion - 1 finely chopped
Green chillies- 3 finely chopped
Curry leaves- as many as you like, finely chopped
Pepper corns- 50 gm
Oil- 1/2 litre
Curd- 500 ml
Salt- to taste
Chat masala- 2 tbsp
Directions
Soak the urad dal overnight. Grind the dal in a grinder the next day. I ground the batter by noon so it was well soaked. Chop the onion, chillies, curry leaves and ginger ( optional- I did not use ginger) finely. Some people like to sauté these ingredients before adding it to the batter but I added it raw. Grind the dal with very little water so that it forms into a thick and coarse paste.

Once the batter is ready add the chopped ingredients. Mix the ingredients and add salt along with pepper corns. Shape the batter like doughnuts with a hole in the middle. The batter will not be firm as doughnut, dough but it should not be difficult to make balls and make an indent in the centre. Use plastic sheets to place shaped vadas before frying. Traditionally people use banana leaf with oil or water. Often a ball size batter is scooped onto banana leaf or plastic sheet or even your palm which is damp and a hole is made in the centre for the perfect vada. Heat oil in a wok and when it's real hot fry the vadas. Drain them with a paper towel or a strainer.
For the dahi. Whisk the curd in a bowl. Add chilli powder and chat masala. Immerse the fried vadas in this curd mix and garnish with chopped cilantro.
For those who don't like dahi vada , you can have the vada with chutney or sauce. But bhai loves dahi vada and it's a pleasure watching him enjoy it.
