I have a faint memory of having Southern fried chicken as a kid,now my mom would faint if I used faint as a term because she says this was a common, staple food of our childhood. I guess it was our craze for KFC that challenged her to go ahead for this version of fried chicken. I wonder how she managed so many recipes without internet. That reminds me I received my first ever mail from my mom and I am thrilled its as if I received my first mail from my kid well kids and elderly have so much in common.
So coming back to my version of SFC ( Southern Fried chicken) I am not pleased with it, I will improvise till it gets right. But for now here's my version. I read a lot of recipes online and I did not have few ingredients many had suggested so I went ahead with mine.
Ingredients for Southern fried chicken
Chicken- 500 gm
Eggs- 2
Milk- 1 cup
Ajinomoto- 2 tsp
All purpose flour- 1 cup
Corn flour- 1/2 cup
Paprika- 1 tsp
Oregano- 1 tsp
Basil- 1 tsp
Pepper powder- 1 tsp
Worcestershire sauce- 2 tsp
Salt- 2 tsp
Oil- 2 cups ( for deep frying so qty depends on your pan)
Directions
Soak the chicken in salt water for half an hour. Make incisions in the chicken so that the salt enters it easily.
In another bowl whisk the eggs and milk followed by the spices and Worcestershire sauce.
Add corn and all purpose flour to this and make it crumbly. Add the chicken to this mix after half an hour soaking in salt water. Now let this mix stand for fifteen minutes. Heat oil in a pan and deep fry the chicken till golden brown.
I used the remaining batter for some potato wedges maybe you could try them or some more veggies the tempura style. So if you are a KFC enthusiast and love experimenting with chicken in your kitchen give this a shot and I'll keep you posted as I crack the secret ingredient that could make this better.
