Potato, cherry tomato and onion frittatta




Something interesting that I came up with recently. Its amazing how a handful of ingredients transform before your eyes.... and I tell myself am I not a magician? :)

Ingredients for Potato Cherry tomato and Onion Frittatta

Potatoes- 2 large cut into cubes
Eggs-6
Cherry tomatoes- 1/2 kg
Onion- 2 large diced
Oregano- a dash
Cheese mozarella- 125 gm
Salt- to taste
Olive oil- 2 tbsp

Directions

Beat the eggs with salt in a bowl and set aside. Heat a pan with olive oil and the onions. Add the potatoes and cook them .


Chop the cherry tomatoes and keep them aside.


In a baking dish make a base with the potatoes and onion. Pour the eggs over this base. Now add the chopped tomatoes and sprinkle the oregano. Sprinkle the cheese and bake the dish for 20 minutes till the eggs are cooked and looks spongy. Serve these cut slices .


Frittattas like these in small moulds make good starters.
