Lime pickle




I lost my grandfather ( my mom's father) when I was 10. I dont remember much about him except that whenever we visited him he bought us lot of goodies and sweets. There aren't many things that reminds me of him but everytime I see vanilla drops biscuits , lemon shaped candies and cumin candies I am reminded of my grandfather. Another distinct flavour I remember is this pickle. Maybe it's my mom's fancy for this that makes it my favourite. I am the only one home who keeps insisting for this pickle. I learnt the recipe last time I went home sharing it with you all.

Christmas is pickle making time for us at home because that's one time we all get together. I am gonna make mango pickle tommorw, will post that soon. I am having a gala time at home with my family and cooking new stuff.

Ingredients for Lime pickle

Lime( even the small lemon would do)- 1 big
Green chillies ( Kanthari is a small green chilli back home that I use mostly for this pickle)- 100 gm



Gingelly oil- 200 ml
Mustard seeds- 2 tsp
Fenugreek powder- 2 tsp
Salt- 2tbsp
Asafoetida powder- 2 tsp



Directions

Chop the lime into small pieces. In a pan, heat oil add the mustard seeds. once they crackle add asafoetida and fenugreek powders.



Into this mix add the lime followed by chillies. Add the salt itno 2 cups of water and boil it in a saucepan while sauteing the lime in the other pan. Add the boiled water with salt into the sauted lime mixture and let the pickle simmer for a while.



The lime would have extracted its essence out by now giving a thick consistency to the gravy. Keep the pickle away from fire and cool it. This pickle can be left outside for few months but to keep it for longer period refrigerate it or add heated gingelly oil over the pickle so that it is fully immersed in oil and does not get spoilt.

We dont add chiili or turmeric powder to this pickle , you can try adding a pinch of turmeric if you want a yellow colour pickle but the flavour of turmeric should not be overwhelming, else you miss out the real flavour of lime that fenugreek and asafoetida alone enhances.
