I was rummaging for low cal , low sugar recipes for a teacher of mine and at the same time a sudden overwhelming fascination for oats conquered me. And the consequence is the cookies baked below. I found them soft and chewy though my favourites always would be cornflakes cookies. My guniea pigs at IIT however tell me the cookies tasted fine and they are all alive so I assume the cookies were edible indeed ! Baking is getting to be a challenge with my microwave oven and it's limited functions. So these limited stunts are what I can pull off max. Hope some of you will give me few suggestions and comments.
Recipe for Oats and Raisins cookies
Flour- 200 gm
Eggs- 2
Margarine- 125 gm
Vanilla essence- 2tsp
Oats- 1 cup
Raisins- 50gm
Sugar- 100gm
Directions
In a bowl beat the eggs and sugar. Into this mix add vanilla essence and sugar and beat well with a blender/beater. Fold in the flour and oats followed by the raisins and mix well.
Make small balls and flatten them. Grease the pan with oil and sprinkle a little flour. Place the shaped cookies onto the tray and bake at 250 degrees for 25 minutes in a microwave oven.
I am not sure of the oven as I use microwave oven. I definitely would prefer the oven to microwave oven any day and waiting eagerly for an oven to experiment massively. So see ya and happy weekend.
