Dates Orange cake




I bought some dates in an offer some time ago I got one pack free on the purchase of another. My mom alwas forced us to eat dates telling us it was high in iron content. I thought the offer was admirable and plunged in. Now after 4 months they lay unused and was nearing their expiry date. I frantically searched for a recipe that utilised dates and guess what I found this.

Cakes are not a favourite with us my hubby and I dont appreciate cakes but we do love experimenting stuff. So, despite a hectic schedule I decided to dispose the dates by making a dates and orange cake. This recipe is supposedly 75 years old as per the website I referred.

Ingredients for Dates and Orange cake

2 sticks unsalted butter, softened

4 cups sugar

4 large eggs

4 cups all purpose flour

1 teaspoon soda

1-1/2 cups buttermilk

1 (8 ounce) package chopped sugared dates

4 teaspoons grated orange rind

1 cup orange juice

Directions

In large mixer bowl, on medium speed beat butter until fluffy. Add two cups of sugar and blend well.Add eggs, 1 at a time, beating until blended after each addition

In another bowl, combine flour and baking soda.Add to butter mixture alternately with buttermilk, beginning and ending with flour mixture.Beat at low speed until blended after each addition.Stir in dates and only 2 teaspoons grated orange rind.

Pour batter into greased and floured 10-inch tube pan.Bake at 350 for 1 hour 10 minutes or until sooden pick inserted in center comes out clean.

I have never loved nutmeg flavour before I had this cake and I guess that highlights the taste. Bon apetit folks.
