Breakfast for us is traditionally a lot of rice stuff and quite heavy. Recently I have been skimming through articles that give me alternatives to our typical breakfasts. That's when I watched Julia Roberts trying her version of eggs in 'runaway bride'. Ever since my interest in experimenting with eggs began. This recipe was inspired by a blog 'fortheloveofcooking'.
Ingredients for Mushroom spring onion omelette
Mushrooms- 100gm sliced
Spring onion- 1 bunch chopped
Cheese- 50gm grated
Onion- 1 chopped
Eggs- 2
Oil- 1tsp
Pepper- 1 tsp
Salt- 1 tsp
Directions
Saute all the chopped ingredients in oil.
In a pan heat oil , whisk the eggs in a bowl and pour it into the pan. Now add the sauted ingredients followed by salt and pepper.Sprinkle grated cheese and cook the omelette. Instead of flipping it completely I fold it over and let it get crispy
. This is quite heavy a breakfast even without a slice of toast and we absolutely loved the omelette in a new avtar.
