Chicken pasta casserole






We had a wonderful weekend with family celebrating my hubby's bday. The week before was horrible for me with issues at work and poor health. I decided to go ahead and pamper myself. And believe me I know no other means than cooking. So here's what we had for the lunch on Saturday " chicken pasta casserole". I dont guarantee it was made authentically , neither was it novel. It was after all an attempt with stuff I had but since I had no leftovers I guess our family was very hungry or pleased with what I whipped up. So here's the recipe and hope some of you try this out.

Ingredients for Chicken pasta casserole


Elbow macaroni- 200 gm
Mushrooms- 200gm
Boneless chicken- 250 gm
Capsicum sliced- 50 gm
Spinach- 2 bunches
All purpose flour- 2 tbsp
Butter- 2 tbsp
Chicken soup- 1 packet
Milk- 1 cup
Vodka/wine- 2 tbsp if preferred
Cheddar cheese- 150 gm
Pepper- 1tsp
Chiili flakes- 2 tsp
Oregano- 2 tsp

Directions

I had no ready made chicken broth so I pressure cooked the chicken with 2 cups of water. Into this stock I added the soup powder and boiled it to a broth.


The chicken was then shredded separating the bones


. The bones were added to the broth and boiled again. Cook the pasta for 10 minutes. See to it that it is not over cooked.


Chop the mushrooms and capsicum and the spinach. In a pan heat butter. Add the chopped onions and saute well. Now add the milk and cheese and flour. This forms a decent white sauce.


I add vodka or wine and if you dont like using alcohol you can leave this ingredient out. Into this sauce add the chicken, mushroom and capsicum and cook for 5 minutes. Pour in the broth and add a dash of pepper, chilli flakes and oregano and take the filling off the flame.

Now in a dish spread the pasta. Sprinkle the chopped spinach, the sauce and sprinkle it with grated cheese.

Bake the dish at 180 degrees for 30 minutes and your casserole is done. Hope you have a great casserole time.
