
I love cookies. Mom used to bake cookies when we were kids that's long time ago. I had some cornflakes cookies recently at a conference and liked it instantly. I bought few from many shops thereafter but never liked them. Something was missing everytime and the prices were unreasonable.So finally I decided to try them myself. I thought it would be difficult but it turned out easy and boosted my confidence to bake cookies. My hubby came home and tried them. He didn't realise they were baked home , that's what he said and I guess that was a compliment. So here's my recipe.
Ingredients for Cornflakes cookies
All purpose flour- 300 gm
Butter- 200 gm
Sugar- 150 gm
Cornflakes- 200 gm
Eggs- 2
Vanilla essence- 2 tsp
Cornflour- 100 gm
Directions
In a bowl blend the sugar and butter.
Add the eggs to this and beat well.
Sieve the flour in another bowl along with corn flour. Add the flours to the sugar-butter-egg mix and mix well.
In a plate crush the corn flakes add it to the batter and mix well.
Grease a baking tray with oil.
Scoop spoonful of the batter onto the baking tray and bake at 180 degrees for 20 minutes in a microwave oven.
