Brinjals were never a hit with my hubby and I loved them because my mom made them in different ways. This is one such recipe. But the origins of this is not my mom but her lunch pack she used to get from her hospital long back when she worked. She used to get a sandwich daily and this was the only vegetarian sandwich. It used to have lots of fried potatoes, capsicums and brinjals fried and smeared with mayonaise. I hated them initially but over the years got used to them. This recipe is an improvised version but it never tasted like the one's I had in the past. Maybe they used Hummus instead of Mayo .
Ingredients for Brinjal Potato Sandwich
Bread- 6 slices
Potato - 1 sliced and fried
Brinjal- 1 sliced and fried
Ketchup - 1 tsp
Mayonaise- 1 tsp
Mustard sauce- 1 tsp

Directions
Fry the brinjal and potato slices till they are crispy. Toast bread and apply a mix of mayonaise, ketchup and mustard sauce onto the slice. Fill the veggies and toast them in a sandwich toaster. A very easy and healthy breakfast. This seems to be a regular at my home especially when I am away. I am back at my institute so I don't cook anymore but I rely on my filed recipes and pics.
