Ethakappam - My comfort food



We all have our comfort food. My hubby says his is omelette, for me its hot tea and ethakappam. I guess I inherited it from dad. He was so fond of these bananas that he once had a bet with my aunt that he could eat 100 of these. Finally by the time my aunt fried 100 pieces my dad had to leave her place as he was there on a visit. So my dad got all the 100 pieces packed and had it on his way back home. Such was his love for these banana fritters. When we grew up in Kuwait these bananas were expensive and not a snack item at any local shop. Back here in India 10 years after my life in middle east, I still can't beleive I can gobble 4 fritters for Rs 20 on a local train. And nothing has succeeded in stopping me from buying them be it fear of cholestrol, hygiene or weight gain. I can't say no to this snack. Can you? Not if you have tasted them. So here's the recipe for those of you who have not tried this. The photo shoot was my hubby dear's experiment to capture his love for banana fritters in pics.


Ingredients for ethakappam

Ethakka ( Nenthrapazham)- 4-5 sliced ( choose ripe bananas only)



Maida ( all purpose flour) - 1 cup
Rice flour- 1/2 cup
Water- as required to make a thick batter
Turmeric/ food colour - for colouring
Oil- for frying

Directions

Slice the banana into four pieces. Make a batter mixing water and both flours.



Add a pinch of sugar and salt along with the colour. Heat oil in a kadai. Now dip the bananas in the batter and fry till golden yellow.
